How to clone a RAID to a single bootable disk

Does anyone know if it is possible to copy a mirrored volume to a single drive which will be bootable into Windows 7?

Yes it is possible.

With free Paragon tools (eg BR16Free, HDM16Basic) you can make the backup of mirrored drive then restore to a single drive.
With paid Paragon tools (eg MigrateOS5, HDM16Advanced ..) you can directly copy the mirrored drive to a single drive.
